Unfortunately I have never tried the application in VDI. So I write possible workaround.
The installer places the application under %HOME%¥AppData¥Local¥mattermost¥. Probably this causes the problem. So you can download a zip version from GitHub release, and it should work at the desired folder. Would you try this?
